Healthy Baked Feta Orzo

A delicious and nutritious twist on traditional baked feta pasta that combines orzo and healthy ingredients.

Ingredients

  • 8 ounces orzo pasta
  • 1 cup cherry tomatoes
  • 1 block (8 ounces) feta cheese
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh spinach

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine orzo, tomatoes, olive oil, garlic, oregano, salt, and pepper. Stir to combine.
  3. Add the block of feta cheese in the center of the mixture.
  4. Bake for 25-30 minutes or until the feta is golden and the orzo is cooked.
  5. Remove from the oven, mix in the spinach, and serve warm.

Notes

  • For a spicy kick, add red pepper flakes.
  • Feel free to substitute vegetables based on your preference.
