Hearty Cheddar Garlic Herb Potato Soup

A warm and comforting potato soup loaded with cheddar cheese, garlic, and fresh herbs.

Ingredients

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup heavy cream
  • 1 tablespoon fresh thyme, chopped
  • salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  2. Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  3. Use an immersion blender to blend the soup until smooth, or carefully transfer to a blender in batches.
  4. Stir in the cheddar cheese, heavy cream, and thyme. Season with salt and pepper to taste.
  5. Heat through and serve warm.

Notes

  • This soup can be garnished with additional cheese and fresh herbs before serving.
  • For a spicier kick, consider adding a dash of cayenne pepper.
