  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup dark chocolate, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups raspberries, fresh or frozen

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter, then press the mixture into the bottom of a springform pan to form the crust.
  3. In a large mixing bowl, beat together cream cheese and sugar until smooth.
  4. Add in the melted dark chocolate, followed by eggs one at a time, mixing well after each addition. Incorporate vanilla extract.
  5. Gently fold in the raspberries.
  6. Pour the cheesecake batter over the crust and smooth the top.
  7. Bake for 55-60 minutes or until the center is set but still slightly jiggly.
  8. Let it cool, then refrigerate for at least 4 hours before serving.
