Jalapeno Popper Smashed Potatoes

  • 2 pounds baby potatoes
  • 1/2 cup cream cheese
  • 1/3 cup sour cream
  • 1/4 cup pickled jalapenos, diced
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil the baby potatoes until tender, about 15-20 minutes.
  3. Drain and let cool slightly, then smash each potato with a fork.
  4. In a bowl, mix cream cheese, sour cream, diced jalapenos, turkey bacon, garlic powder, onion powder, salt, and pepper.
  5. Spread the mixture onto the smashed potatoes on a baking sheet.
  6. Top with shredded cheddar cheese.
  7. Bake in the preheated oven for 15-20 minutes until cheese is bubbly.

Notes

  • For a milder flavor, use fewer jalapenos.
  • Can substitute regular bacon for turkey bacon if desired.
