Keto Crispy Reuben Roll-Ups

A delicious low-carb twist on classic Reuben flavors.

Ingredients

  • 8 slices turkey bacon
  • 6 ounces chicken ham
  • 1 cup shredded Swiss cheese
  • 1/2 cup sauerkraut, drained
  • 4 large lettuce leaves
  • 2 tablespoons Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the turkey bacon until crispy, then drain on paper towels.
  3. Lay out lettuce leaves and spread Dijon mustard on each.
  4. Add chicken ham, sauerkraut, and Swiss cheese on top of lettuce.
  5. Roll up the leaves tightly, securing with a toothpick if necessary.
  6. Place roll-ups on a baking sheet and bake for 10 minutes until cheese is melted.

Notes

  • For extra crunch, broil the roll-ups for 2-3 minutes after baking.
  • Substitute turkey bacon with regular bacon if preferred.
