Leftover Pulled Pork Chili

A delicious and easy recipe for using up leftover pulled pork in a hearty chili.

Ingredients

  • 2 cups leftover pulled pork
  • 1 can diced tomatoes
  • 1 can kidney beans, drained
  • 1 can black beans, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add leftover pulled pork, diced tomatoes, beans, chicken broth, chili powder, cumin, and salt. Stir well.
  3. Bring to a boil, then reduce heat and let it simmer for 20-30 minutes.
  4. Taste and adjust seasoning if necessary before serving.
