Ingredients

  • 1 cup orzo
  • 4 cups chicken broth
  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, heat the olive oil and sauté the carrots, celery, and garlic until softened.
  2. Add the diced chicken and cook until no longer pink.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the orzo, thyme, lemon juice, and zest. Reduce heat and simmer until the orzo is cooked.
  5. Season with salt and pepper to taste.
  6. Serve garnished with fresh parsley.

Notes

  • For added flavor, add a bay leaf while simmering.
