  • 12 egg whites
  • 1 teaspoon cream of tartar
  • 1 teaspoon lime zest

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, sift together sugar, flour, and salt.
  3. In a separate bowl, beat the egg whites until foamy.
  4. Add cream of tartar and beat until soft peaks form.
  5. Gradually add the sugar mixture, beating until stiff peaks form.
  6. Fold in lime zest and lime juice gently.
  7. Pour batter into an ungreased angel food cake pan.
  8. Bake for 35-40 minutes until golden.
  9. Cool upside down in the pan for 1 hour before removing.
