Loaded Potato Meatloaf Casserole

A delicious and hearty casserole that combines the flavors of loaded potatoes and meatloaf for the ultimate comfort food experience.

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 cups mashed potatoes
  • 1 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1/4 teaspoon paprika

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, egg, salt, black pepper, garlic powder, and onion powder. Mix until well combined.
  3. Transfer the meat mixture to a greased casserole dish and form into a loaf shape.
  4. Spread the mashed potatoes over the meatloaf, smoothing out with a spatula.
  5. Sprinkle shredded cheddar cheese on top of the mashed potatoes.
  6. Dollop sour cream on top and sprinkle with green onions and paprika.
  7. Bake in the preheated oven for 1 hour or until the meatloaf is cooked through and cheese is melted.
  8. Let it rest for 10 minutes before slicing and serving.

Notes

  • For a spicier version, add chopped jalapeños to the meat mixture.
  • Leftovers can be stored in the refrigerator for up to 3 days.
