Loaded Veggie White Lasagna

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 2 cups mushrooms, sliced
  • 1 cup zucchini, diced
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 4 cups white sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon dried oregano
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add mushrooms and zucchini to the skillet and cook until tender. Stir in chopped spinach and cook until wilted.
  4. In a bowl, combine ricotta cheese, cooked veggies, oregano, salt, and pepper.
  5. In a baking dish, spread a layer of white sauce on the bottom. Layer three lasagna noodles over the sauce.
  6. Add half the ricotta mixture, half the mozzarella, and a layer of white sauce. Repeat layers, finishing with noodles, sauce, and remaining mozzarella and Parmesan on top.
  7. Cover with foil and bake for 30 minutes, then remove foil and bake for another 15 minutes until golden and bubbly.
  8. Let cool for a few minutes before slicing and serving.

  • This lasagna can be assembled ahead of time and stored in the refrigerator before baking.
