- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, chopped
- 2 cups mushrooms, sliced
- 1 cup zucchini, diced
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 4 cups white sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon dried oregano
- salt and pepper to taste
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add mushrooms and zucchini to the skillet and cook until tender. Stir in chopped spinach and cook until wilted.
- In a bowl, combine ricotta cheese, cooked veggies, oregano, salt, and pepper.
- In a baking dish, spread a layer of white sauce on the bottom. Layer three lasagna noodles over the sauce.
- Add half the ricotta mixture, half the mozzarella, and a layer of white sauce. Repeat layers, finishing with noodles, sauce, and remaining mozzarella and Parmesan on top.
- Cover with foil and bake for 30 minutes, then remove foil and bake for another 15 minutes until golden and bubbly.
- Let cool for a few minutes before slicing and serving.

- This lasagna can be assembled ahead of time and stored in the refrigerator before baking.
