Mini Key Lime Pies

These mini key lime pies are the perfect sweet treat, offering a tangy and refreshing burst of flavor in every bite.

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • 1 teaspoon lime zest
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined.
  3. Press the mixture into the bottom of mini tart pans to form the crust.
  4. Bake for 8-10 minutes until golden brown, then let cool.
  5. In another bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest.
  6. Pour the filling into the cooled crusts and bake for an additional 10 minutes.
  7. Allow to cool, then refrigerate for at least 2 hours.
  8. Whip heavy cream with powdered sugar and vanilla extract until peaks form.
  9. Top each mini pie with whipped cream before serving.

Notes

  • Use fresh key limes for the best flavor.
  • These pies can be made in advance and stored in the refrigerator.
