- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large egg yolks
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup fresh key lime juice
- 1 teaspoon lime zest
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined.
- Press the mixture into the bottom of mini tart pans to form the crust.
- Bake for 8-10 minutes until golden brown, then let cool.
- In another bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest.
- Pour the filling into the cooled crusts and bake for an additional 10 minutes.
- Allow to cool, then refrigerate for at least 2 hours.
