Mushroom-Spinach Scrambled Eggs

  • 1 cup fresh spinach
  • 2 slices turkey bacon

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and chop.
  2. In the same skillet, add olive oil and sauté the mushrooms until they are tender.
  3. Add the spinach and cook until wilted.
