One-Pot Balsamic Chicken and Orzo

A delicious and easy one-pot meal featuring tender chicken and orzo soaked in a savory balsamic sauce.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/4 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides. Remove from pot and set aside.
  2. In the same pot, add garlic and sauté until fragrant.
  3. Add chicken broth, balsamic vinegar, oregano, salt, and pepper. Bring to a simmer.
  4. Add orzo and stir to combine. Place the chicken back into the pot.
  5. Add cherry tomatoes and cover. Simmer for 15 minutes or until orzo is cooked and chicken is no longer pink.
  6. Stir in fresh basil before serving.

Notes

  • For added flavor, marinate the chicken in balsamic vinegar for a couple of hours before cooking.
  • Leftover chicken can be used in salads or sandwiches.
