  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches, sliced
  • ½ teaspoon cinnamon
  • ¼ cup brown sugar

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix the graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  3. In a mixing bowl, beat the cream cheese and granulated sugar until smooth. Add eggs one at a time, followed by the vanilla.
  4. Pour the cheesecake mixture over the crust.
  5. In another bowl, mix the sliced peaches with cinnamon and brown sugar, then scatter over the cheesecake batter.
  6. Bake for 50-60 minutes. Let cool to room temperature, then chill in the refrigerator for at least 4 hours before serving.
