  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 cup crushed peppermint candies

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the peppermint extract and cooled coffee.
  5. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Divide the batter evenly among the cupcake liners.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool completely before frosting.
  10. In a small bowl, mix the powdered sugar with milk to make a glaze and drizzle it over the cooled cupcakes.
  11. Top with crushed peppermint candies.
