  • 3/4 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup crushed pineapple, drained
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in the crushed pineapple.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Pour the batter into a greased cake pan.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. For the frosting, beat cream cheese with powdered sugar and vanilla until smooth.
  10. Once the cake is cooled, frost it with the cream cheese frosting.

Notes

  • For added flavor, consider adding toasted coconut on top of the frosting.
  • This cake can also be made in advance and frozen, then frosted before serving.
