  • 1 cup crushed pineapple, drained
  • 1/2 cup brown sugar, packed
  • 1/2 cup maraschino cherries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the crushed pineapple.
  7. In a separate bowl, mix the brown sugar and maraschino cherries.
  8. Press a spoonful of the cherry mixture into the bottom of each cookie dough ball.
  9. Place the cookie dough balls on a lined baking sheet and bake for 12-15 minutes or until the edges are lightly golden.

Notes

  • For a more intense pineapple flavor, add some crushed pineapple on top of each cookie before baking.
