  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, oil, pumpkin puree, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. Fill the cupcake liners 2/3 full with batter and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Let the cupcakes cool completely before frosting.
  7. For the frosting, beat cream cheese and butter until smooth, then gradually add powdered sugar and vanilla until well combined.
  8. Frost the cooled cupcakes and enjoy!
