Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup rolled oats
  • 1/4 cup protein powder
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup chocolate chips (optional)

Instructions

  1. In a large mixing bowl, combine pumpkin puree, rolled oats, protein powder, almond butter, honey, cinnamon, and nutmeg.
  2. Mix until all ingredients are well combined.
  3. If desired, fold in chocolate chips.
  4. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  5. Place the balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to set.
