- 1 cup pumpkin puree
- 1 cup almond flour
- 1/2 cup protein powder
- 1/4 cup maple syrup
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (dairy-free)
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, combine pumpkin puree, almond flour, protein powder, maple syrup, and eggs.
- Add baking soda, cinnamon, nutmeg, and salt; mix until well combined.
- Fold in chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow muffins to cool before removing from the tin.
Notes
