Pumpkin Protein Muffins (Gluten Free, Dairy Free)

Delicious and healthy pumpkin protein muffins that are perfect for a gluten-free and dairy-free diet.

  • 1 cup pumpkin puree
  • 1 cup almond flour
  • 1/2 cup protein powder
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (dairy-free)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine pumpkin puree, almond flour, protein powder, maple syrup, and eggs.
  3. Add baking soda, cinnamon, nutmeg, and salt; mix until well combined.
  4. Fold in chocolate chips.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow muffins to cool before removing from the tin.

Notes

  • These muffins freeze well for up to 3 months.
  • Adjust sweetness by adding more or less maple syrup.
