  • 2 cups pumpkin puree
  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the chopped turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add diced onion and minced garlic. Sauté until the onion is translucent.
  3. Add the pumpkin puree and chicken broth. Stir well to combine.
  4. Bring to a simmer and cook for 10 minutes.
  5. Using an immersion blender, puree the soup until smooth.
  6. Stir in the heavy cream, nutmeg, cinnamon, and the reserved turkey bacon. Season with salt and pepper.
  7. Cook for another 5 minutes until heated through.
  8. Serve hot and enjoy!

  • For a vegan option, substitute turkey bacon with smoked tempeh.
  • Adjust the consistency by adding more or less broth according to your preference.
