  • 2 tablespoons olive oil
  • 1 bell pepper (any color), sliced
  • 1 onion, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup queso cheese, shredded
  • 1/4 cup cilantro, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the sliced bell pepper and onion; cook until tender.
  4. Sprinkle garlic powder, cumin, and chili powder over the chicken and veggies.
  5. Add in the queso cheese and melt, stirring until creamy.
  6. Garnish with chopped cilantro before serving.
