This quick and easy baked zucchini recipe features turkey bacon for a healthy twist. Perfect as a side dish or a light meal!

  • 2 medium zucchinis
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out some of the flesh to create space for filling.
  3. Cook the turkey bacon in a skillet until crispy, then chop it into small pieces.
  4. In a bowl, mix the chopped turkey bacon with olive oil, garlic powder, salt, and pepper.
  5. Fill the zucchini halves with the bacon mixture and sprinkle with grated Parmesan cheese.
  6. Place the stuffed zucchinis on a baking sheet and bake for 20-25 minutes, or until the zucchinis are tender and the cheese is golden.
  7. Remove from the oven and let cool for a few minutes before serving.
