Raspberry Crumble Cookies

  • 1/2 cup rolled oats
  • 1/3 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup raspberries, fresh or frozen
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, oats, brown sugar, and salt.
  3. Add the softened butter to the dry ingredients and mix until crumbly.
  4. Press half of the mixture into a greased baking dish.
  5. Spread the raspberries over the base layer.
  6. Crumble the remaining mixture over the raspberries.
  7. Bake for 25-30 minutes or until golden brown.
  8. Allow to cool before cutting into squares.

Notes

  • For a sweeter treat, add a tablespoon of granulated sugar to the raspberries.
  • These cookies can also be made with other fruits like blueberries or strawberries.
