- 2 pounds short ribs
- 1 pound chorizo sausage
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 can (28 ounces) diced tomatoes
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 cup kidney beans, rinsed and drained
- 1 cup black beans, rinsed and drained
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- Heat olive oil in a large pot over medium heat.
- Brown the short ribs on all sides, then remove from the pot.
- Add chorizo, onions, and garlic to the pot; sauté until the onions are translucent.
- Stir in the tomatoes, beef broth, chili powder, cumin, smoked paprika, and season with salt and pepper.
- Return the short ribs to the pot and bring to a simmer.
- Cover and cook for about 2 hours, or until the ribs are tender.
- Add kidney beans and black beans, simmering for an additional 30 minutes.
