Short Rib and Chorizo Chili Recipe

A hearty chili that combines the rich flavors of short rib and spicy chorizo for a comforting meal.

Ingredients

  • 2 pounds short ribs
  • 1 pound chorizo sausage
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 can (28 ounces) diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 cup kidney beans, rinsed and drained
  • 1 cup black beans, rinsed and drained
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the short ribs on all sides, then remove from the pot.
  3. Add chorizo, onions, and garlic to the pot; sauté until the onions are translucent.
  4. Stir in the tomatoes, beef broth, chili powder, cumin, smoked paprika, and season with salt and pepper.
  5. Return the short ribs to the pot and bring to a simmer.
  6. Cover and cook for about 2 hours, or until the ribs are tender.
  7. Add kidney beans and black beans, simmering for an additional 30 minutes.
  8. Serve hot, garnished with your favorite toppings.

Notes

  • For added heat, include diced jalapeños.
  • Allow the chili to sit for a few hours or overnight for deeper flavors.
