- 9 lasagna noodles
- 1 pound shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup white wine
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/4 cup fresh parsley, chopped
- 1 teaspoon red pepper flakes
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add shrimp and cook until pink, about 2-3 minutes.
- Pour in white wine and let it reduce for about 5 minutes.
- In a bowl, combine ricotta cheese, half of the mozzarella cheese, parsley, red pepper flakes, lemon juice, salt, and pepper.
- In a baking dish, layer lasagna noodles, followed by the ricotta mixture, and then the shrimp mixture. Repeat layers, finishing with noodles.
- Top with remaining mozzarella and cover with foil.
- Bake for 25 minutes, then remove the foil and bake for an additional 15 minutes until golden and bubbly.
