  • 2 ripe bananas

  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas and mix in the pumpkin puree.
  3. Add the sugars, vegetable oil, eggs, and vanilla extract to the bowl and mix well.
  4. In another bowl, combine the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. If desired, fold in the chopped walnuts.
  7. Pour the batter into a greased loaf pan and smooth the top.
  8. Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a richer flavor, use ripe bananas that are heavily speckled.
  • Feel free to add chocolate chips for an extra treat.
