Slow Cooker Beef Bourguignon

A comforting and easy-to-make beef bourguignon using your slow cooker, ideal for family dinners.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 slices bacon, diced
  • 4 cups red wine
  • 2 cups beef broth
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • 1 pound mushrooms, quartered
  • 4 tablespoons flour
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the bacon until crisp. Remove and set aside.
  2. In the same skillet, brown the beef cubes on all sides.
  3. Transfer the beef and bacon to the slow cooker.
  4. Add wine, beef broth, carrots, onion, garlic, tomato paste, thyme, and bay leaves to the slow cooker.
  5. Stir to combine and cover the slow cooker.
  6. Cook on low for 8 hours or high for 4 hours.
  7. In the last hour, add mushrooms and flour, stir well.
  8. Season with salt and pepper to taste before serving.

Notes

  • For a richer flavor, let the dish sit overnight in the fridge and reheat before serving.
  • Serve with crusty bread for a complete meal.
