Soft and chewy gingerbread cookies that are perfect for the holiday season.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking soda, spices, and salt.
  3. In another bowl, cream the butter and sugars until light and fluffy.
  4. Add the egg and molasses, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Chill the dough for 30 minutes.
  7. Roll out the dough and cut into desired shapes.
  8. Bake for 8-10 minutes or until edges are firm.
  9. Let cool on a wire rack.

Notes

  • For extra flavor, add a teaspoon of vanilla extract to the dough.
  • Decorate with icing after cooling.
