  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add the molasses, ginger, cinnamon, baking soda, and salt, mixing until combined.
  4. Gradually add the flour, mixing until just combined.
  5. Chill the dough in the refrigerator for about 30 minutes.
  6. Once chilled, scoop the dough into balls and roll in granulated sugar.
  7. Place on a baking sheet lined with parchment paper and flatten slightly.
  8. Bake for 8-10 minutes or until the edges are set.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For a spicier cookie, increase the ginger and cinnamon.
  • Store cookies in an airtight container for up to a week.
