- 1/4 cup unsalted butter, softened
- 1/4 cup brown sugar, packed
- 1/4 cup molasses
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/4 cup granulated sugar (for rolling)
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
- Add the molasses, ginger, cinnamon, baking soda, and salt, mixing until combined.
- Gradually add the flour, mixing until just combined.
- Chill the dough in the refrigerator for about 30 minutes.
- Once chilled, scoop the dough into balls and roll in granulated sugar.
- Place on a baking sheet lined with parchment paper and flatten slightly.
- Bake for 8-10 minutes or until the edges are set.
