Soft Gingerbread Cookies : Old Fashioned Iced Ginger Molasses Cookies

  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream the butter and brown sugar until light and fluffy.
  4. Add the molasses, egg, and vanilla extract; mix well.
  5. Gradually add the dry ingredients to the wet ingredients.
  6. Chill the dough for about 30 minutes.
  7. Roll out the dough and cut into desired shapes.
  8. Bake for 8-10 minutes and let cool.
  9. To make the icing, mix powdered sugar, milk, and vanilla until smooth; drizzle over cookies.

Notes

  • For extra flavor, add a pinch of nutmeg.
  • Store the cookies in an airtight container to maintain softness.
