Strawberry Earthquake Cake

This Strawberry Earthquake Cake is a delicious twist on a classic dessert, featuring strawberries and a gooey cream cheese center.

  • 1 box chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup fresh strawberries, chopped
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Mix until well combined.
  3. Pour half of the batter into the prepared baking dish.
  4. In another bowl, beat together the cream cheese and powdered sugar until smooth. Add in the chopped strawberries and mix gently.
  5. Spoon the strawberry cream cheese mixture over the cake batter in the baking dish, then pour the remaining cake batter on top.
  6. If using, sprinkle chopped walnuts on top.
  7. Bake for 40-45 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool before serving.

Notes

  • For a richer flavor, use dark chocolate cake mix.
  • Store leftovers in an airtight container in the refrigerator.
