  • 2 large eggs
  • 1/2 cup pureed strawberries
  • 1/4 cup pureed mango
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the strawberry and mango purees and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients until just combined.
  7. Fill the cupcake liners with the batter and bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow them to cool before frosting.
