Street Corn Pasta Salad

A delicious and unique take on traditional pasta salad featuring street corn flavors.

  • 2 cups grilled corn
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside to cool.
  2. In a large bowl, combine the cooled pasta, grilled corn, cherry tomatoes, red onion, and cilantro.
  3. In a separate bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
