Teriyaki Pineapple Chicken & Rice Stuffed Peppers

  • 4 large bell peppers
  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 cup teriyaki sauce
  • 1 cup pineapple chunks
  • 1/2 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the diced chicken until no longer pink.
  4. Add the teriyaki sauce, pineapple chunks, green onions, garlic powder, and ginger to the skillet and mix well.
  5. Stir in the cooked rice and remove from heat.
  6. Stuff the mixture into the bell peppers.
  7. Place the stuffed peppers in a baking dish and sprinkle sesame seeds on top.
  8. Bake for 25-30 minutes or until the peppers are tender.
  9. Serve warm and enjoy!

Notes

  • Feel free to substitute the chicken with tofu for a vegetarian option.
