Texas Tamale Pie is a delightful dish that combines the flavors of classic Tex-Mex cuisine with a healthy twist.

  • 1 pound turkey bacon
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 cups cornbread mix
  • 1 cup shredded cheese
  • 1 cup diced tomatoes

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy. Remove and crumble.
  3. Add black beans, corn, spices, and crumbled bacon to a bowl and mix well.
  4. Prepare the cornbread mix as per package instructions.
  5. Spread the bean mixture in a baking dish and top with cornbread batter.
  6. Bake for 30-35 minutes or until golden brown.
  7. Remove from oven, sprinkle with cheese and diced tomatoes, then return to bake for an additional 5 minutes.
  8. Let it cool for a few minutes before serving.

Notes

  • Feel free to add jalapeños for extra spice.
  • Serve with sour cream or guacamole for added flavor.
