- 1 pound turkey bacon
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 2 cups cornbread mix
- 1 cup shredded cheese
- 1 cup diced tomatoes
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the turkey bacon until crispy. Remove and crumble.
- Add black beans, corn, spices, and crumbled bacon to a bowl and mix well.
- Prepare the cornbread mix as per package instructions.
- Spread the bean mixture in a baking dish and top with cornbread batter.
- Bake for 30-35 minutes or until golden brown.
- Remove from oven, sprinkle with cheese and diced tomatoes, then return to bake for an additional 5 minutes.
