- 4 large sweet potatoes
- 6 slices turkey bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 2 green onions, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Wash and poke holes in the sweet potatoes. Bake for 45-50 minutes until tender.
- While the sweet potatoes are baking, cook the turkey bacon in a skillet until crispy. Chop into pieces.
- Once the sweet potatoes are done, allow them to cool slightly, then slice them in half and scoop out the flesh into a mixing bowl.
- Add sour cream, milk, garlic powder, salt, pepper, and half of the cheese to the sweet potato flesh. Mix until smooth.
- Fold in the chopped bacon and green onions.
- Fill the sweet potato skins with the mixture and top with the remaining cheese.
- Return to the oven and bake for an additional 15 minutes until cheese is melted and bubbly.
- Serve warm and enjoy!
Notes
- For a spicier kick, add some diced jalapeños to the filling.
