  • 4 large sweet potatoes
  • 6 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 green onions, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the sweet potatoes. Bake for 45-50 minutes until tender.
  3. While the sweet potatoes are baking, cook the turkey bacon in a skillet until crispy. Chop into pieces.
  4. Once the sweet potatoes are done, allow them to cool slightly, then slice them in half and scoop out the flesh into a mixing bowl.
  5. Add sour cream, milk, garlic powder, salt, pepper, and half of the cheese to the sweet potato flesh. Mix until smooth.
  6. Fold in the chopped bacon and green onions.
  7. Fill the sweet potato skins with the mixture and top with the remaining cheese.
  8. Return to the oven and bake for an additional 15 minutes until cheese is melted and bubbly.
  9. Serve warm and enjoy!

Notes

  • For a spicier kick, add some diced jalapeños to the filling.
  • These can be made ahead of time and reheated before serving.
