  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook quinoa in water according to package instructions.
  2. Season chicken breast with salt, pepper, and dried oregano, then grill or pan-sear until cooked through.
  3. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, feta cheese, olives, and red onion.
  4. Slice the grilled chicken and add it to the bowl.
  5. In a small bowl, whisk together olive oil and lemon juice, then drizzle over the chicken bowl.
  6. Toss everything together to combine and serve immediately.
