  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons peppermint extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the peppermint extract.
  4. Combine the flour, baking soda, and salt; gradually add to the creamed mixture. Stir in the chocolate chips.
  5. Drop by tablespoonfuls onto ungreased baking sheets.
  6. Bake for 10 to 12 minutes in the preheated oven, or until edges are nicely golden.
  7. Allow cookies to cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
